- Food: what is on the plate is by far the most important factor. The quality of produce is among the most telling signs of a restaurant's culinary status. Use of seasonal produce and freshness is all-important too and a telling indication of quality. This means not only using fresh rather than frozen fish, for example, but also preparing everything from scratch at the last possible moment, from appetizers through desserts. Quality must also go in pair with consistency.
The quality of side items, like bread, matters too. Lastly, wine complements food, and wine lists and offerings can be revelatory. A list doesn't have to be long or expensive to show a commitment to quality. The house wine can speak volumes about the culinary attitude and level of an establishment.
- Service: keep in mind that customer service in Ghana is not at levels you may have been accustomed at home and that, due to the fact that many restaurants are new, training may have not yet brought full results. In your rating of Service, take also in account side issues such as the welcome you received, the quality of the toilets, parking, signage, access, etc.
- Ambiance: remember that higher-end restaurants are usually quiet places where « ambiance » is purposedly avoided. On the other hand, some lifestyle restaurants play the ambiance card as a full part of the experience offered to customers.
